"Rib Chef Controlled Cooking System"

1.  These are 16 oz. Beefeater cuts of an Export Rib Roast after being tumbled in a dark seasoning that will simulate the Mallard reaction when heated. Pull and thaw under refrigeration if frozen. A 112a boneless Rib Eye may also be used. Cut any desired portion evenly cut 2.  Place portion on Rib Chef Base and center.
3.  Place Rib Chef top on meat surface and have even contact with surface of meat, allowing the Rib Chef to simulate an inch of mass to be added to the roast slice 4.  The Rib Chef simulates two 1-inch end cuts added to the roast. If you turned the unit vertical, it would be positioned like a roast in the oven.
5.  Place entire unit into the staging oven and heat on 20% power level for about one minute per oz. Times may vary with oven wattage. After a few tries, you will become familiar with your oven 6.  Be sure everything is perpendicular to the center of your oven.
7.  Be sure staging oven is on 20% power level. 8.  This was a 16oz. portion set for 16 minutes. An 8oz. portion is 8 minutes
9.  While the Rib Chef cooks your Prime Rib (hands free), your chef is free to prepare other items. When done, the Chef removes the Rib Chef top from meat when ready to plate. 10.  Once the top is removed, the slice begins to bloom. Tone down if desired with hot Au Jus. This picture is after 16 minutes. Notice how the juice is retained in the meat.
11.  A few more minutes in the Rib Chef and you have a medium rare Rib Eye. 12.  The portion is presented and is a perfect center roast slice that is the freshest and juiciest Prime Rib anyone would ever want. Follow the same steps for cooking a Rib Eye and then place on the grill for one minute per side and it will be the same quality Rib Eye. Thus, one inventory for both items.
13.  A tender steak easy to cut and full of the natural juices. 14.  The customer sees the Prime Rib bloom right before his eyes.
 

15.  Tone down the steak with hot Au Jus for the perfect Prime Rib. With the Rib Chef system, you can serve Prime Rib every day!
